Ooey-gooey marshmallows stirred through chocolate crispies and orange essence, topped with melted chocolate and Terry’s Chocolate Orange segments…
Crispy cakes have long been a childhood favourite for parents and kids alike. I used to LOVE the days I could take one in my lunch box or buy one at break time. Even better, parents love these creations too because they offer a super fast means of satisfying your children’s sweet treat cravings. My Chocolate Orange Marshmallow Crispy Cakes can be whipped up in just 15 minutes plus a few hours in the fridge to set, so they really are a fast and easy recipe and they’re no-bake too! My no-bake Oreo Crumb Chocolate Truffles were a big hit with you all, so I thought these might go down well too!
These crispy cakes are a guilty pleasure of mine, but I have never quite found the perfect recipe. The cakes always seemed to be either chocolate or marshmallow (using coco pops or rice crispies respectively) but never mixed the two. After Rochelle from the Saturday’s made chocolate orange shortbread with marshmallow frosting on last year’s Charity Bake Off, I haven’t been able to get the idea of chocolate, orange, and marshmallow all at once out of my head, and so my Chocolate Orange Marshmallow Crispy Cakes were born!
You can of course use other cereals like cornflakes or non branded varieties as long as they are a size and shape that will stick together happily, so feel free to adjust my recipe to include your personal favourites. This will make about 12 large slices and I used a greased and lined lasagne/glass baking dish to set them in, but you can use any similar sized tin. Weigh out your ingredients beforehand as once the marshmallows are melted you’ll want to work quickly.
1 1/2 teaspoons orange essence
150g cocoa pops
150g melted chocolate (of your choice)
12 Chocolate Orange segments (roughly half of a Terry’s Chocolate Orange)
- Over a low heat, melt the butter and then add the marshmallows. Stir until they are all melted, add your orange essence and then pour over the cocoa pops in a heat proof bowl. Use a spoon or two (it gets sticky!) to mix the two well together and then spoon into a lined dish or tin and press the top so it is roughly level.
- Melt your chocolate next, either in short bursts in the microwave or in a heatproof bowl over a saucepan of water. Stir frequently if using the microwave and keep an eye on it so you don’t burn it. Once melted, pour over the top of the crispy cake
- It’s the final step already – that’s how easy these Chocolate Orange Marshmallow Cakes are! Pop your chocolate orange segments equally across the top, I did one per slice so used 12 in total and chill in the fridge for a few hours or until set.
All that’s left to do now is slice and enjoy! I first made these for a Macmillan Coffee Morning and they were the first thing to disappear from the table of baked goodies, so I hope yours go down just as well!
