Packed with Christmassy flavour, this Orange and Vanilla Chai Spiced Shortbread has oodles of festive spice and zest!
December is here and Christmas is coming! If, like me, you’ve been struggling to contain your festive excitement for the last month, you’re in for a treat now! This Orange and Vanilla Chai Spiced Shortbread is the first of my Christmassy recipes coming to the blog in the next few weeks! The Vanilla Chai is full of nutmeg and cinnamon flavours, so it’s perfect for adding to your Christmas bakes. The combination of Orange and Vanilla Chai flavours went down a storm in my Vanilla Chai Spiced Teabread with an Orange Drizzle, so I just had to bring them back for my Christmas biscuit baking!
I chose to create another shortbread recipe for two reasons. First, shortbread is a biscuit popular at Christmas time anyway and is great for popping into a hamper because it keeps fairly well. Secondly, and more excitingly, my Lavender and Vanilla Shortbread recipe is the most popular on my blog to date! It’s funny how certain recipes take off, but this one has so I thought I’d give you more of what you love, revamped for the Christmas season!
This recipe bakes about 20 medium sized star shortbread biscuits. I chose stars because they’re one of the shapes that always makes me think of Christmas, but fingers, rounds, or even Christmas trees would be fine too! It’s a very quick recipe to prep and just needs a little chilling in the fridge, so it’s ideal for the busy season when you want a quick but festive flavourful bake.
300g plain flour
2 Vanilla Chai teabags (snip the top and tip the contents out)
Zest of 2 oranges
200g butter, cubed
- Mix all of your dry ingredients together in a bowl for even dispersal, before rubbing in your butter to form breadcrumbs. Do so with your fingertips like you would if you were making shortcrust pastry. Press the dough into a ball, wrap in cling film and refrigerate for 30 mins.
- In the mean time, preheat your fan oven to 160’C and line 2 baking trays. Roll out the chilled dough to about 2-3cm thick and cut into stars or whatever shape you have chosen. Spread them across your baking trays, pricking the centre of each lightly with a fork to release any steam.
- Bake your Orange and Vanilla Chai Spiced Shortbread for 15-20 minutes until they are just slightly golden at the edges. Once cooled, scatter with sugar and enjoy!
These biscuits are the perfect all rounder. They are great for dunking in a warming tea, coffee, or hot chocolate but are equally delicious served warm with a dollop of clotted cream. It is Christmas, after all!
