I bet you want to see the cake that won, right?
It was Kelly’s attention to detail, skilful carving and careful colouring that wowed me with this pug cake. If you’re inspired by Kelly’s cake business success, read on to learn all about her business and how she’s got to where she is.
How did you get into baking?
I dabbled in baking here and there since I was a child, but I have been baking at a professional standard since the age of 13. I learned to bake from the amazing professional chefs I worked under throughout my career. My favourite thing to bake is shortbread – nothing beats freshly baked traditional English shortbread cookies!
Tell us about your first cake job
I started my career at the young age of 13. Too young to work, I volunteered at The Children’s Specialized Hospital, in Mountainside, New Jersey. I volunteered in the kitchen preparing desserts for terminally ill children. At 16 I jumped into cake decorating and bakery work for a short time and one year later I became a full time employee in a high end hotel kitchen.
Do you have any cake qualifications?
In 2001 I was accepted into the world-renowned Culinary Institute of America in Hyde Park, New York where I earned my two-year Associates Degree in Culinary Arts. I decided at that point to forgo a Bachelor’s Degree and instead to obtain another two-year Associates Degree, this time in Baking and Pastry Arts. At that time, I was one of only five people who had ever obtained both degrees at the NY Culinary Institute of America location, and was the first woman to accomplish this task.
While in the baking and pastry program it became clear to me that cakes are my true passion in life. I was able to complete the two-year Baking and Pastry Degree in just over a year, graduating for the second time in 2004.
What is your cake niche?
Since then I have devoted myself to the wedding cake industry and pride myself on producing cakes that not only look great but are delicious as well. In 2010 I moved to Houston, Texas from the East Coast, where I continue to push the boundaries with my cake and buttercream creations. I love to devote my total attention to each and every cake. With over 19 years of experience in the culinary field, and 12 focused solely on creating amazing cakes, I think it’s safe to say that I have found my niche!
