This marks the second of my special festive recipes for you and I have to say I’m really pleased with these Christmas Tree Brownies, I hope you will be too! I wanted to create a recipe that was at once full of traditional Christmas flavours but also something that whole family’s could enjoy baking and eating together. Brownies fitted the bill perfectly! These Chocolate Orange Marshmallow Crispy Cakes also go down a treat with the kids. I’m also really excited to finally share my brownie mix recipe with you. My last few brownie posts (Cookie Dough or Bonfire Night S’mores Brownies to name a few) have been adapted from other base brownie recipes which are equally yummy in their own right and I encourage you to bake them. These, however, give me a bigger sense of satisfaction. I’ve been chasing the perfect gooey, fudgey, but still the teeniest bit cake textured brownie for MONTHS and finally I’ve perfected my recipe! The brown sugar, reduced flour, and extra egg yolk are what works the magic here. You don’t need to undercook your brownie batter for a gooey finish, just make the most of these ingredients in your recipe and you’ll have perfect fudgey brownies every time, yay! Here’s how to make them:
This recipe makes about 10 brownies plus offcuts
180g butter, softened
120g caster sugar
60g soft light brown sugar
150g milk chocolate, melted
1 teaspoon vanilla extract
2 eggs plus an extra yolk
50g hazelnuts, chopped
30g cocoa powder
90g self raising flour
50g white chocolate, melted
Handful of cranberries, dried or fresh
- Preheat your fan oven to 180’C and grease a standard brownie tray (about 20cm square). Cream together your butter and two sugars to create a light mixture. Then add the melted milk chocolate and vanilla extract, beating until they are thoroughly mixed.
- Next add your eggs and extra yolk. Don’t worry if your mixture looks like it might split, the flour added in the next step should bring it right back again.
- Sift together the flour and cocoa powder before folding into the original brownie batter, followed by the hazelnuts. Pour into the prepared tin, level the top, and bake for about 20 minutes until a skewer inserted in the middle comes out clean. Your Christmas Tree Brownies are baked!
- Cool in the tin completely before slicing into triangles and decorating. If you have a Christmas tree cutter, even better! Pipe white chocolate tinsel onto each tree, adding blobs where you want to stick the cranberry baubles on top. Add the cranberries and let it all set before tucking in!
